What is the difference between rated and maximum power on the KG5800i?

Rated power (4.7kW) is the output the set is designed to deliver continuously and is the figure to size a load against. Maximum power (5.0kW) is the short-duration ceiling for motor starting and inrush. Buy on the rated figure.

Is the output safe for sensitive electronics?

Yes. The inverter produces a pure sine wave at total harmonic distortion of ≤5%, with auto voltage regulation of ±2%. Laptops, televisions, audio equipment, medical devices and laboratory instruments run without the flicker or noise a conventional generator produces.
